We don’t often recommend waffle house-type restaurants, but this one made the cut. Look for the healthier options on the menu like the Goat in Headlights (Liege waffle topped with chevre goat cheese, organic avocado, fresh organic basil, two sunny side up organic eggs topped with paprika and fresh coriander and drizzled with arbequina olive oil); the Self-Fulfilling Prophecy (Liege waffle topped with one sunny side up organic farm fresh egg, nitrate-free bacon, and real Vermont maple syrup).

And if you’re wondering what Liege waffles are (we did, too), they are pronounced LEE-AGE and they are richer, sweeter than the typical Belgian waffles. They were invented by Prince Bishop of Liege’s chef in the 18th century, hence their name. You have to taste them to experience the extraordinary results of this unique adaptation of brioche bread dough.
